Calabria is a region rich in quality and excellent products, which has been able to exploit its unique and inimitable climate to enhance unique traditions, creativity and incomparable flavours.
Among these, we certainly cannot fail to mention bergamot: a citrus fruit known for its intense aroma and its sweet and sour juice, which is often used to perfume foods and drinks.
Bergamot contains chemicals called polyphenols, which have antioxidant properties and can bring great benefits, particularly for heart and circulatory system health: some studies have suggested that consuming bergamot could help reduce "bad" cholesterol levels (LDL) and raise levels of "good" cholesterol (HDL) in the blood. Additionally, it could help prevent blood clots from forming, reducing the risk of heart attacks and strokes.
Bergamot has also been studied for its potential effect on weight loss and weight management as well as its antibacterial and antimicrobial properties, which could make it useful in treating infections of the skin and mucous membranes – although extensive analyzes are still needed to confirm these. theories.
Also in Calabria we can find another supreme specialty: Carolea olives.
A variety of olive grown mainly in Calabria, with fleshy pulp and an intense flavor and a characteristic aroma. They are often used to produce high quality extra virgin olive oil, appreciated for its intense taste and nutritional properties.
Carolea olives are high in monounsaturated fat, which can help lower "bad" cholesterol (LDL) and increase "good" cholesterol (HDL) in the blood. They also contain numerous nutrients such as vitamin E, essential fatty acids and polyphenols, which have antioxidant properties and may have health benefits.
Two specialties with fantastic qualities, which come from the same land, both considered niche functional foods due to their high content of bioactive compounds.
So why not find ways to exploit their properties in less orthodox ways?
Researchers at the University of Reggio Calabria thought of this: bergamot and olives as ingredients to produce beers with different styles - Blanche and Weiss - very rich in antioxidants and intended for an audience of consumers interested in a healthy lifestyle.
The nutraceutical properties of these two beers were compared with those of Blanche and Weiss produced with "traditional" ingredients, to verify whether the natural extracts of Bergamot and olives modified their aroma, flavors and functionality.
The phenolic profile of the bergamot beer was qualitatively and quantitatively the richest in biocompounds.
The total phenols contained in the bergamot and olive beers were positively and significantly correlated with the antioxidant activities, namely with 2,2-diphenyl-1-picrylhydrazyl (DPPH) and the total antioxidant capacity (TAC).
Correlation data showed that bergamot is the beer with the greatest antioxidant activity and amount of bioactive compounds.
Moreover, it seems that the addition of these natural extracts, together with the right production process, has improved the sensory properties of the beer, satisfying the taste of the group of consumers called upon to test its quality.
